DescriptionWe are looking for a talented food scientist who will work in the new product development pipeline of Better Dairy. The role will focus on the development and maturation of cheese prototypes. The successful candidate will develop novel processes in cheese making using different ingredients without compromising on taste or quality. You will use your knowledge in food science and apply it to a novel approach to cheese making. This role is based in our Hackney Wick office and labs full-time. The successful candidate will be able to demonstrate strong technical ability alongside communication and interpersonal skills.The successful candidate will be comfortable pitching in at every level and enjoys a high accountability/high autonomy environment.
Responsibilities
- Conduct ingredient application tests under supervision including but not limited to testing new raw materials, packaging and different process conditions
- Execute shelf life, stability and other product tests using qualitative and quantitative methods
- Assist with test objectives for product development, research, and sensory experiments of current and future prototypes
- Explore the molecular dynamics of milk proteins and vegetable fats during cheese-making to develop animal-free cheeses
- Support functional evaluations and recipe development, by cooking and tasting prototypes, and creating and maintaining technical documents about them
- Continuously develop flavour/aroma descriptive abilities and lexicon to support flavour application work and participate in team sessions/trainings
- Perform other assigned responsibilities and scientific techniques as needed
- Provide general laboratory support, source and purchase ingredient supplies
- BS, MS (preferred) in Food or Dairy Science
- Minimum 1 year of experience in developing formulae in dairy-based applications
- Knowledge of ingredients functionality (vegetable lipids is a plus).
